Healthier No-Grilling Turkey Reuben

Easy Pepper Turkey Reuben without the heaviness of grilling! Reuben sandwiches have been one of my favorite sandwiches for forever. But the usually greasy, heavy Reuben just doesn’t agree with me anymore. This version is much lighter and very simple to put together. No butter to be found at all. Just the raw sauerkraut and quality sliced turkey and tasty rye.

We make traditionally grilled sandwiches this way in my house all the time and enjoy this healthier version just as much. The sharp flavor of the Dijon mustard helps make this one. The New York Style Rye Bread from Trader Joe’s is one of the best rye bread’s I’ve eaten recently. You should try it!!

THE REAL FOOD INGREDIENTS

In this Reuben recipe, lightly toast the bread instead of spreading butter on it and grilling it, which for me causes a heavy, greasy taste and feel. So much healthier and tastes great.

Spread a little mayo and Dijon mustard on each slice of bread and pile one slice high with the pepper turkey. The pepper on the turkey adds a nice kick. Press the liquid out of the Bubbies raw sauerkraut so it is as dry as possible and cover the turkey with it. Lay down a slice of Swiss cheese and top with the other slice of bread, then cut in half.

Garnish with the black olives and cornichon pickles. The cornichons are a little spicy hot and are a great accompaniment. Serve with a small portion of lower sodium real potato chips on the side. Look for chips with only potatoes, oil and salt in the ingredient list.

Notes: According to the Bubbies website, “Bubbies Sauerkraut is made from the crisp, center leaves of the finest quality winter cabbages, which are shredded, salted and naturally fermented for several weeks.” Sounds so fresh and healthy and tastes that way too. My husband and I like to eat our sauerkraut uncooked because it retains the health benefits of raw sauerkraut that way.

I like to use Whole Foods 365 pitted black olive because of the ingredient list. Most black olives contain an ingredient called ferrous gluconate, so in my quest to eliminate any unnecessary ingredients I choose the product with only olives, water and salt.

Raw Sauerkraut really delivers on the health benefits. As cabbage ferments to produce sauerkraut, it produces a variety of live bacteria. These probiotics replenish the good bacteria in your gut and help inhibit the growth of bad bacteria.

Heat kills the live bacteria, so eat it raw. If you cook it or buy pasteurized sauerkraut, you won’t benefit from the probiotics. I eat sauerkraut for its health benefits as well as for enjoyment and want to make sure I get the most from it.

    Ingredients

    • 1/2 Lb. High Quality Deli Pepper Turkey
    • 4 Slices Swiss Cheese
    • 8 Slices New York Style Rye Bread (From Trader Joe’s)
    • 1 Cup Bubbies Old Fashioned Sauerkraut
    • Dijon Mustard
    • Mayo
    • 365 Pitted Black Olives (For Garnish)
    • Cornichon Pickles (For Garnish)
    • Low Salt Potato Chips (Serve a Few on the Side)
