Party Beef Nachos and Blue Corn Chips

My husband and my sister and I (along with millions of other people) watched Super Bowl 50 today. I was looking for something different to serve during the game and decided Beef Nachos and Blue Corn Chips served with Black Beans and Corn Salad would be great for our tiny little party and add to the festivities.

Since the Seattle Seahawks, our team, weren’t involved in the competition we didn’t have a lot invested in the outcome of the game and could just relax and enjoy the event. I thought Lady Gaga’s performance of the National Anthem was wonderful and the half-time entertainment was fun too.

Even though this is a healthier version of nachos, especially with the nutrient rich avocado, the party food turned out fantastic and helped make for a very enjoyable afternoon.

THE REAL PARTY FOOD INGREDIENTS

Party Beef Nachos

Prepare the Toppings: Chiffonade, cut into long thin strips, a hand full of spinach and dice some tomatoes. Dice an avocado and squeeze the juice of  a lime over it and gently stir together. Crumble some feta cheese and place it and all of the other toppings into small bowls or onto plates. Fill a small bowl with salsa and another small bowl with whole olives for garnishing.

Drop a small amount of Avocado oil in a non-stick pan. Crumble a pound of ground beef into the pan and cook on medium heat until it is slightly browned. Add some fresh salsa and stir. I use the raw onion and garlic in the fresh salsa as an assist so I don’t have to add them separately. It’s a little time saver. Add your favorite hot sauce and sprinkle with pepper and stir.

Heat the broiler of your oven on the high setting. Spread a layer of No Salt Added Blue Corn Chips on an oven tray. The blue chips add some great color to the dish, as well as being a little healthier. Sprinkle some shredded cheese over the chips evenly and place the pan under the broiler of your oven.

After the cheese is melted and bubbly, spread the ground beef mixture over the cheese covered chips and put them under the broiler for a couple of minutes more.

Serve each person a plate of the chips, cheese and seasoned beef mixture, then they can choose the toppings to finish their nachos. Serve Black Beans and Corn Salad with Red Peppers on the side.

Party Beef Nachos

Easy Real Food Recipes Hearts Only Logo

 

Prep Time: 20 Minutes     Cook Time: 15 Minutes     Yield: 6 Servings

Ingredients

  • 1 Lb. Lean Ground Beef (I Used Good Quality Locally Grown Lean Ground Beef)
  • 1/2 Cup Salsa, Plus Extra for Serving (Fresh or Refrigerator Version, Not the Jarred Shelf-Stable Kind)
  • 1 Tablespoon Hot Sauce
  • 2 Cups of Blue Corn Chips (I Use Organic No Salt Added)
  • 1 Cup Four Cheese Blend Shredded Cheese (Check the Ingredient List for Unwanted Additives)
  • 1/2 Cup Pitted Black Olives (365 Brand is Ferrous Gluconate Free)
  • 1 Medium Avocado
  • 1 Cup of Organic Spinach (Toxins Can Cling to Non-Organic)
  • 1/2 Cup Organic Tomatoes (Organic is Preferred with Tomatoes Also)
  • 1/2 Lime, Juiced
  • 1 Cup Feta Cheese
  • Sprinkle of Ground Black Pepper

Preparation

  5. Pre-heat the broiler of your oven on the high setting.

  7. Sprinkle the 2 cups of shredded cheese over the chips evenly and place the pan under the broiler of your oven.
  8. After the cheese is melted and bubbly, spread the ground beef mixture over the cheese covered chips and put them under the broiler for a couple of minutes more.
  9. Serve each person a plate of the chips, cheese and seasoned beef mixture, then they can choose the toppings to finish their nachos.
  10. Serve the Black Beans and Corn Salad with Red Peppers on the side.
