Simple and healthy and economical rotisserie chicken. What could be easier!! On Mondays, the Whole Foods Market in our neighborhood sells their rotisserie chickens at a discount. The good quality poultry and choice of different seasonings makes this a stress-free tasty healthy meal.
Sometimes I feel like eating healthy can be very time-consuming, so I’ll take a little help whenever I can get it. I like to remove the meat from the entire chicken and use the leftovers for a couple of other meals during the week.
Just add some fresh organic asparagus with lemon, a good quality artisan multi-grain bread (this one is from Trader Joe’s) and fresh organic strawberries with a little honey and coconut cream for dessert.
Chop the asparagus into bite-sized pieces and season with pepper and lemon, then quickly sauté in a teaspoon of olive oil. Next garnish with a few leaves of tasty fresh basil.
Last, chop the strawberries, add some to a small bowl and drizzle with a little honey and top with a dollop of whipped coconut cream.
The protein and Vitamin-B rich chicken is a great center piece for this simple and healthy Real Food Meal.
