French Toast With Maple Yogurt and Pecans

French toast or “pain perdu,” which means, “lost bread,” was created as a way to use stale bread instead of giving it to the birds. Just dip it in some eggy custard.

You can top it with almost anything you like. Try some maple syrup, yogurt, whipped cream, nuts, honey, jam, fruit, chocolate or even an egg. You get the picture!

It’s usually made with breads like sourdough or challah or brioche, but I prefer to use my favorite hearty multi-grain bread.

I can get my whole grains and eggs in this easy breakfast, lunch, or “breakfast for dinner” real food meal, that I’ve been enjoying since I was a child.

THE CUSTARDY BREAD REAL FOOD INGREDIENTS!

First, whisk some yogurt and maple syrup together in a small bowl and hold it in the refrigerator for topping the French toast later.

Next, in a flat dish or pie plate whisk some eggs, vanilla and cinnamon until combined and then whisk in some milk.

Now, heat a non-stick pan with a little coconut oil or butter on medium heat.

While waiting for the pan to heat, dip each slice of bread into the egg mixture, soaking each side well.

Then, place one or two pieces of bread at a time in the pan, depending on the size of your pan, and cook until the toast is browned on both sides.

Finally, top each slice with some of the maple yogurt and sprinkle a few chopped raw pecans over that. If you like your French toast a little sweeter, pour a very small amount of maple syrup over the top.

For a little more protein with your meal, add a piece of turkey bacon or some breakfast sausage.

    Ingredients

    • 2 Large Eggs
    • 1/4 Cup Whole Milk (Low Fat Milk Can Also Be Used)
    • 1 Teaspoon Pure Vanilla Extract (Check Ingredient List for Unwanted Additives)
    • 1/4 Teaspoon Ceylon Cinnamon (Or Your Favorite Cinnamon)
    • 6 Slices of Whole Grain Bread (I Used an Artisan Multi-Grain Bread)

    Toppings

    • 1/2 Cup Plain Yogurt (Greek Yogurt Can Be Used, No Unwanted Ingredients)
    • 1 Tablespoon Pure Maple Syrup (Get the Best Quality You Can)
    • 1/4 Cup Chopped Pecans, Raw
