Soft-Cooked Egg and Sliced Tomato Breakfast Toast

I was reminded again how well eggs and tomatoes go together the other morning. I don’t normally think of them as an item, but when I wanted something to go with my soft-cooked eggs for breakfast and had some Roma tomatoes on hand, I ended up enjoying every bite of this quick healthy real food meal.

Placing the egg and tomato on top of a slice of my favorite multi-grain toast with a smear of mayo and a sprinkle of sea salt and ground black pepper makes a satisfying breakfast or any meal. It’s a balance of good quality protein, whole grain carbs, some veg and a bit of fat and is exactly how I like to start the day. Jazz it up a little with a few slices of a juicy crisp Fuji apple or any other fruit you have available and you’re ready to go.

THE EASY HEALTHY REAL FOOD INGREDIENTS

Soft-Cooked Egg and Sliced Tomato Breakfast Toast

First, get the eggs cooking. Try my “Making Easy Perfect Soft-Cooked Eggs” recipe HERE if you don’t have one of your own. I like to boil my soft-cooked eggs for 6 minutes, but you might like yours a little runnier or a little more done. It’s a personal choice for sure!

While the eggs are cooking, pop the slices of bread into the toaster. When the toast is done let it cool a little, then generously spread on some mayo. Tomatoes with mayo has always been one of my favorite things.

As soon as the eggs have reached the desired time, immediately remove them from the heat and run cold water over them in the pan to stop the cooking process. While the eggs are resting in the cold water, slice the Roma tomato into thick slices and place them on the mayonnaise and toast.

Then, carefully peel the shell from the eggs, cut them in half or quarters, place them on top of the tomato slices and sprinkle with a little sea salt and ground black pepper.

The eggs are still slightly warm and taste wonderful with the crunchy fresh tomato and hearty 100% whole grain toast. Serve with a few sweet apple slices and enjoy this quick healthy meal!

    Ingredients

    • 2 Large Eggs, Cold (Try my“Making Easy Perfect Soft-Cooked Eggs” recipe on my website in the “Kitchen Tips” section)
    • 1 Small Roma Tomato
    • 2 Slices Multi-Grain Bread (Good Quality Whole Grain)
    • 1 Tablespoon Mayonnaise
    • Sea Salt and Ground Black Pepper to Taste
    • 1 Small Fuji Apple (Or Any Fruit You Have on Hand)
