One thing I love about the Summer Season, almost more than anything else, is the abundance of fresh fruit and healthy juicy strawberries and watermelon are two of my favorites. They make great nutritious snacks, are especially wonderful for breakfast as a side or in a smoothie or even alone. They’re fantastic as a light dessert too and are a Real Food!
Watermelon is mostly water, but this refreshing fruit is full of nutrients. It has significant amounts of vitamins A, B6 and C, a little potassium, lots of lycopene, antioxidants and amino acids. This favorite summer snack is also fat-free, very low in sodium and low in calories.
The popular aromatic strawberry is rich in antioxidant and anti-inflammatory benefits, cardiovascular benefits and are said to have cognitive benefits. They’re also an excellent source of vitamin C, vitamin B6, magnesium, potassium and omega-3 fats.
I like to say “Eat the Seasons!” Feel free to enjoy fresh beautiful strawberries and watermelon often while they’re available.
The best way to enjoy watermelon is cold and cut into bite-size pieces, so help yourself to a heaping bowl full. Or cut it into wedges for easy eating at an outside event.
As far as strawberries go, eat them alone or try them with a little whipped coconut cream. My recipe Simple Strawberries and Coconut Cream Summer Dessert can be found HERE.

If we can pick local, we do. The blueberries were pretty awesome this year too.

Yes, the chilled soup looks so refreshing. I had liked it previously, the mint, the ginger and the honey. Wonderful!
