It’s going to be another 90-degree day today and iced lattes have become my go to drink. I use a good quality French Roast medium-dark bold blend instant coffee and it’s just as satisfying as any brewed coffee I’ve had. Instant coffee is an easy way to get a cooling iced drink fast.
Dark, rich aromatic coffee combined with cold creamy milk and a generous sprinkle of Ceylon cinnamon with a little pure vanilla is served over ice and is the perfect cool-down drink for the Summer season. It’s refreshing and makes a great breakfast or afternoon beverage.
THE COOL LAST DAYS OF SUMMER INGREDIENTS
Begin by mixing two to three teaspoons, or more if you like it stronger, of your favorite instant coffee with a quarter cup of water. The water can be room temperature or heated, my instant coffee dissolves fine either way. Stir until the crystals are dissolved and add the pure vanilla. It only takes minutes!
Then add half a cup of cold milk, I use full fat milk but feel free to use lower fat or use non-fat milk to make it skinny. It’s already low in sugar since pure vanilla extract is used instead of a sugary syrup. Or use non-dairy milks like almond, cashew, coconut or whatever you prefer.
To finish, drop several ice cubes into the mix, stir slightly and then sprinkle with an abundance of spicy ground cinnamon and enjoy.
I usually drink coffee with a straw to avoid dental staining and this green Eco version is compostable and biodegradable. You can find them made from PLA, or “corn plastic”, a 100% renewable resource.
I’ve often read that coffee is healthy, with its massive amounts of antioxidants being one of the greatest health benefits. It is one of the world’s most popular beverages and is widely consumed. It’s called an anti-inflammatory food and provides small amounts of vitamins and minerals.
