It’s been just over two years since I received a life changing medical diagnosis and something like that changes the way you see everything. In the past, I was constantly trying to reach perfection in what I ate, my level of fitness, my work and my environment. What I understand now is balance is more important than anything and simple meals can be just as healthy as complex recipes made from scratch.

This wholesome combination, laid out on a cute board, could be a snack or a quick easy meal. It includes my meal prep chicken salad scooped onto cucumber rounds and provides good quality protein and fat, the celery and pickled asparagus add to the veggies and the multi-grain pita chips bring the carbs to create a balanced meal. Finish by topping everything off with a sprinkle of flaky sea salt.

Hubby and I decided to take a movie day today and are in the process of watching several movies, so eating needs to be quick as well as healthy. With my system of relying heavily on our pantry and fridge, all I needed to do was go to the kitchen and within minutes I created this balanced healthy tasty meal. And since we haven’t been very active this afternoon, a light meal is all we needed.

Dessert will be just as simple, fresh cantaloupe chunks drizzled with a little local honey. Since, we took a walk around our neighborhood this morning, we can also feel good about following my Embracing A Healthy Immune Boosting Lifestyle program as well as enjoying a stress-free day off. I love this cutting board because it makes a simple meal even more attractive and was a gift from sister, Mary.

I get a little help from the market for the pickled asparagus, be sure to check the ingredient list though. Mine have asparagus, water, vinegar, salt, sugar, spices and garlic. Finally, the multi-grain pita chips come from Trader Joe’s.

A very healthy, nutritious and balanced snack board 😋 I’m curious about those pickled asparagus 😋 I eat asparagus usually steamed but I’ve never tried it pickled ☺️ and I looove pickles 😋

I also love pickled things! I’ve read they’re good for digestion. I use pickled asparagus to add some variety along with other fresh vegetables. I’m pretty sure you can find them in most grocery stores. I’m sure you’ll like them!
